Because coffee changes, the "recipe" we use to extract the best espresso needs to change every day, too. The core variables in this recipe include the quantity of ground coffee, the extraction time, the water temperature and the volume in the cup.
At Harris + Hoole, we have our very own coffee lab to test the coffee and determine the optimal daily recipe. We then send this recipe to all our baristas to ensure that the espresso in your cup is the best it can be on any given day.
